Sherry Peach Cobbler

Cobblers, particularly sherry cobblers, are one of my go-to drinks over the summer. The cobbler is low ABV, super delicious and just continues to get better the longer it sits on that ice. Oloroso sherry has notes of dried apricot, peach and raisins and is just magic when paired with peaches. Cognac adds a little more kick, but also infuses more nuanced barrel flavors into this drink that are superb.

Ingredients

SERVINGS: 1 Cocktail
  • 4 slices peach
  • 1 slice orange
  • ½ ounce simple syrup
  • 2½ ounces Oloroso sherry
  • ½ ounce VSOP cognac
  • Cubed ice for shaker
  • Crushed ice to finish
  • Garnish: Peach slice and mint sprigs

Preparation

In a cocktail shaker, muddle together the peach and orange slices with the simple syrup. Add the sherry and cognac. Top with ice and shake vigorously. Strain into stemmed cocktail glass (or a snifter works great as well). Top with mounds of crushed ice. Garnish with a peach slice and mint sprigs.
