The Fennel Word

Ingredients

  • 1½ ounces fennel juice (freshly extracted, see instructions below)
  • 4 cucumber slices
  • Pinch of Italian parsley
  • Pinch of kosher salt
  • ½ ounce lime juice
  • 1 ounce simple syrup
  • 1½ ounces blanco tequila (gin would work too)
  • 3 ounces club soda
  • Garnish: fennel frond, lime wedge

Preparation

Wash the bulb and fronds well. Cut bulb into cubes and juice in a juice extractor.

In a cocktail shaker, muddle the cucumber slices and parsley with the kosher salt, lime juice and simple syrup.

Add the fennel juice and tequila.

Top with ice and shake vigorously.

Strain into a tall glass filled with ice.

Top with club soda (or sparkling water).

Garnish and enjoy!
