When the mercury rises around the country and everyone else races outside to light the grill, the very last thing on our minds is turning up the heat in the kitchen by preparing long, complicated meals. We enjoy summertime indoors in the Valley.

So what's a desert dweller to do for summer entertaining? Try this cooling menu featuring local, seasonal produce and artisanal food and wine. All menu items are served at room temperature or cooler and require minimal cooking time, so you can stay cool and savor a delicious dinner with friends. No charcoal required.

The Menu

Pillsbury 2010 'Casa Blanca' Pinot Gris

Antipasto Platter:
coriander quick pickles
• cold black-eyed peas salad
• prosciutto
• local bread

DeCio fettuccine with fresh heirloom grape tomatoes, basil, Queen Creek Tuscan Estate extra-virgin olive oil and fresh mozzarella

Honeydew melon and lemon basil sorbet
