Coriander Quick Pickles

Ingredients

SERVINGS: Serves 4-6
  • 2 tablespoons coriander seeds
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon granulated sugar
  • 1/4 cup hot water
  • 3 garlic cloves, smashed
  • 1/2 cup white wine vinegar
  • 1 organic cucumber, seeded and diced
  • 1 small red chile, split in half
  • 3 sprigs fresh dill

Instructions

Bash the coriander seeds with a mortar and pestle until they're broken open and just barely ground. Dissolve the salt and sugar in hot water and whisk together with the coriander, garlic and vinegar. Toss the cucumber, red chile and fresh dill together with the marinade in a covered container and refrigerate for up to 8 hours.
